....Having settled just outside Newport, in 2001 I decided to reconsider my career path, offering short, sharp, bursts of creativity on a freelance basis to the  food manufacturing industry. This also gave me the opportunity to create delicious pâtisserie & chocolates to sell at my local Farmers Markets. Today it's the mainstay of the business and over the years I've built up a loyal following of customers at Usk & Abergavenny Farmers Markets. 


I feel very privileged to have worked with some of the most outstanding professionals in the industry, and bring all the experience I've gained to my  kitchen.


Whatever your preference, be it croissants, desserts or chocolates you can be sure of  the ultimate sweet sensation.

Fresh Seasonal and Local...

Being a home based business allows me to be more flexible with my menus. Every week I carefully consider what to put on my market menu, trying to keep it fresh and interesting. You'll normally find me up at 3.00am on a Saturday morning baking fresh croissants and viennoiserie and putting the finishing touches to the desserts on my menu.


Many of the ingredients I use for my desserts are seasonal and where possible British. My flour is milled by Shipton Mill near Tewkesbury, my butter churned by a dairy in Swansea and the sugar is made from British sugar beet. I try to work with the seasons as much as possible, buying British grown fruit where feasible and frozen fruit from a farm in Herefordshire. For citrus and tropical fruit it's a case of knowing what's in season and when, for example bergamots come into season around November time, blood oranges January,  tropical fruit is at it's best around the beginning of the year  and if its a good year British strawberries make their first appearance at the beginning of April.


I'm always on the lookout for new sources of ideas and inspiration. In addition to the regular desserts, croissants and chocolates on the menu,  I also offer market specials inspired by seasonal ingredients, the weather and any new ideas I'm able to create.

The carrot cake was the best I have ever tasted! Really moist and full of flavour. I asked everyone for marks out of ten and not one person gave it less than 12!
